Our SIP

Our SIP project turns sustainability into a hands-on experience through direct encounters with local producers.
As part of ETSM2030, we developed our Sustainable Innovation Project (SIP) together with our international partner Eliksir and Paweł Wątor from Gdańsk. The concept of “Evening events with local producers” places producers and their sustainable methods at the centre, giving guests the opportunity for direct, meaningful encounters.

While Eliksir hosted a series of events in Poland at exceptional venues – from the airport to the harbour – we welcomed guests at the Holzner's 1908 restaurant to an evening that highlighted the connection between fine dining, regional value chains and artisanal agricultural practices. Chef Stephan Zippl explained the importance of seasonal, small-scale production before producer Harald Gasser from Aspingerhof presented his rare varieties and traditional techniques. The menu, created entirely from his products, told a story of origins, craftsmanship and sustainability in every course.
