Award for our local producers project

For over a year we have been participating in ETSM2030, a European programme promoting sustainable tourism development. Together with international partners, we have worked on innovative sustainability projects. For our SIP “Evening events with local producers”, we collaborated closely with the restaurant Eliksir and Paweł Wątor from Poland, who organised a series of producer-focused events in Gdańsk and developed with us an evening concept that brings sustainable practices to life.
At our event at the Holzner, the encounter between guests and local producers took centre stage. Chef Stephan Zippl explained the importance of small-scale, seasonal production, while Harald Gasser from Aspingerhof presented his traditional methods and rare varieties of vegetables and fruit. The menu – inspired entirely by his products – demonstrated how fine dining, regional value creation and responsible food culture are deeply connected.
This combination of authentic storytelling, producer engagement and culinary quality convinced the jury – and we are truly honoured by this recognition.
