Healthy eating
Our kitchen only uses products that have fully traceable origins. Of course, preference is given to regional and seasonal products. For this reason, we use our own products whenever possible: most of the herbs, spinach and chard, rocket and other lettuce types, elderberry, Gravenstein apples and redcurrants we use come from our own gardens.
We aim to procure other products from our nearby surroundings: fruit and vegetables from Renon farms, along with eggs and dairy products that exclusively come from animal-friendly free-range stocks. This includes cheese from the Erschbaumer farm and from Degust, and eggs from the Buchhütter farm in Soprabolzano. Of course we don’t procure all of our supplies from South Tyrol businesses and producers. We ask for your understanding in this matter; we are already well on our way.
